Tomato Sandwiches.

Sometimes the best things are the simple ones. For instance, tomato sandwiches.
In my mind they’re equated with my grandparents. I always spent summers with them as a kid. Using days to the fullest running around their huge yard, helping my grandmother hang laundry on lines outside, and assisting my grandfather in the garden.
Ah yes, the garden. We’d pick bell peppers, then sit on the back porch with nothing more than his pocket knife and a shaker of salt. The tomatoes were lucky to make it into the kitchen, where they’d be sliced thick and laid out on bread that had been toasted and slathered with mayonnaise and salt and pepper. Like I said… the simple things.

June 2, 2010 at 8:29 pmI have that same memory. My Nana would cut my sandwiches into triangles and, always, no crusts! I don't think I'll ever eat a "toasted tomato" and not think of her.

June 3, 2010 at 2:14 amI grew up in North-eastern PA – the Tomato Capital of the World – and a tomato sandwich, exactly as you described, was like a perfect little piece of heaven. I savored every one, and I miss them so much now. Tomatoes anywhere else just aren't the same.

June 3, 2010 at 3:36 amChiiiiilllld! You are NOT alone on this one! Growing up a comforting favorite was toasted tomato sandwiches!!! We never used mayo but plenty o' butter. Not that I'd mind mayo… LOVE the stuff! Such a sweet flashback and dinner inspiration for tomorrow night. 🙂

I was just professing my love for tomato sandwiches yesterday (with fresh, home grown tomatoes they are THE BEST!) This has to be a sign from the universe to have one for lunch tomorrow!

Tomatoes on toast reminds me too of my childhood.
We didn't do the mayonnaise though, just lashings of butter, thick slices of tomato on top, ground pepper and sea salt…. heavenly 🙂
