Put an Egg On It
I’m not exactly sure what’s going on, but I’ve been craving eggs like crazy lately. All in all that’s not so strange, it’s just that I maybe eat an egg-centric dish twice a year and I think I’ve topped that in the past month alone. But looky-looky, my craving is your advantage because here are some of the best egg dishes I’ve come across lately. (And before the questions start, the answer is a resounding no. I’m not pregnant. Pinky swear.)

Lately, I have been making “egg tacos”…breaking an egg, yolk and all in a small frying pan, and then placing my favorite (La Tortilla Factory) tortillas on top while it cooks and melts together.
Flip it out on on a plate, and fill it with any thing that is found fresh in the fridge.

I had the best pizza awhile ago at Eva in SLC – it was called the ratatouille pie – had eggplant, zucchini, and feta braised in tomato sauce with a baked egg on top! Now I’m craving it so badly. They also have a great eggs benedict pizza I’ve been dying to recreate. Thanks for all the inspiration!

March 14, 2011 at 11:01 pmHave you ever tried pastured eggs? I get some from a farmer at the farmer’s market here in San Diego. Let me tell you, they’ve changed my world. I’ve never had eggs that are more delicious. I so wish I could invite you over to try some — you’d swoon.
