When summer rolls around (as it unofficially has) this is my go-to dinner that I eat four or five times a week. The Summer Mix-Up Bowl, as I haphazardly refer to it, is light and healthy and takes advantage of not only all the lush summer produce available this time of year but also any leftovers you might have laying around.

It’s really versatile, too. I like to start with a bed of greens, then layer on a grain like brown rice or quinoa, two to three vegetables (some steamed and some raw), then finish things off with some seeds or nuts and a drizzle of vinaigrette. Yeah, it’s that easy. Of course you can always add meat if you’re so inclined, but I’m not.

    I’ve been a big fan of adding spelt to my salads this year. And don’t forget the protein – either in tofu or egg form!

    This would be for the non-vegetarians out there, but I love making random tuna salads. Can of tuna and any old fresh/canned veggies/beans I have on hand, doused with some cobbled together dressing. Keep a bowl of it in the fridge. No need to heat.

    Also, sometimes I just eat watermelon for dinner during the summertime. 🙂

    Favorite summer salad: Heirlooms tomatoes, fresh corn (off the cob), and arugula, drizzled with balsamic vinaigrette and topped with shaved parmesan – Sweet, salty, crunchy and fresh. Yum! It’s great on its own or with fish or chicken.
