The Daily Eat: Tequila Lime Shrimp + Shrimp Roundup.

Tequila Lime Shrimp is one of those dishes that so easy and tastes so good that you’ll want to lie about it and say it’s a recipe you picked up while summering in Mexico. But we’ll both know the truth.

The Daily Eat: Coconut Shrimp.

Shrimp is a very summery food to me. It’s both light and easy to make, given the right recipe. I hope you enjoy Shrimp Week!

The first time I had coconut shrimp was during my 21st birthday dinner with my parents. We were at a fairly upscale restaurant and they were skewered as a appetizer. And I proceeded to let one fly across the table as I tried to dislodge it from the skewer. In front of everyone. Awesome. Can’t wait to try out these Coconut Shrimp with Apricot Sweet Chili Dipping Saucesans skewers!

The Daily Eat: Tzadziki.

Tzadziki is a Greek dish that wears many hats as a dip, appetizer and salad. Which is a very good thing because it’s easy to make and perfect for hot summer days. Try serving it up with some pita bread and feta for an easy summer meal. (Pssst… it’s pretty low in calories, too!)

The Daily Eat: Cool Cucumber Soup.

Cucumbers are one of my favorite sumer veggies. I love the crispness and mild flavor. Cucumber season isn’t here quite yet, but I thought I’d get your summer recipe wheels a-turnin’ with Cucumber Week.

I think I’ve only eaten a cold soup maybe, oh, once in my lifetime. They’re all over the place, just not on my table. But I’m thinking that could change with this recipe for Cool Cucumber Soup. I love the simple ingredients used and that it probably packs a mean flavor punch.
