Mushroom Stroganoff

Beef stroganoff was my favorite dinner growing up, and my very favorite part of that dinner was picking out all of the mushrooms in the sauce for myself. Now that I’m an adult and mainly a vegetarian, I decided to update the classic that my Grandma found on the back of a bag of egg noodles sometime in the 1950s. There are two ingredients that you won’t find in other stroganoff recipes that make this take on it completely different.

Mushroom Stroganoff
• 2 Tbsp butter
• 1/2 C minced onion
• 1 clove minced garlic
• salt and pepper
• 2 C sliced mushrooms (I like portobellos)
• 1 C vegetable broth
• 1 Tbsp vinegar
• 4 oz tomato paste
• 1/2 C sour cream
• 1 bag wide egg noodles

In a pan melt butter and sauté mushrooms, onion, and garlic. Add a few dashes of salt and pepper. Cook until mushrooms and onions soften and begin to turn translucent. (About 8 minutes.) Stir in vegetable broth, vinegar, and tomato paste. Simmer uncovered for 10 minutes. Stir in sour cream and simmer for 2 additional minutes. Serve over wide egg noodles.

* If you’d like to go the meat route, add 1 lb. ground beef or turkey and 2 Tbsp flour after you sauté the vegetables and cook until browned.

Plumen recently launched a Kickstarter campaign for its second designer low-energy lightbulb, and holy crap the campaign is already fully funded! It’s really easy to see why, just look at Plumen 002. Art and ambience all in a lightbulb of all things. They’ll be available for purchase come September 1st and LED products are coming down the pipeline.

Rebecca Atwood + Calypso

I have a mega design crush on Brooklyn-based artist Rebecca Atwood, and if possible it just got bigger. Her use of traditional textile techniques and hand painting makes my heart go pitter patter and both are on full display in the new Rebecca Atwood  and Calypso St. Barth collaboration. Four unique designs with reversible details are now available online and in stores. The white canvas, subtle metallics, and soft sea greens and blues will bright up your winter and still feel fresh and vibrant when summer rolls around! I’m one of those people. The kind who prefers pen and paper to touchscreen and who needs to write down everything in order to remember it. I’ve used a day planner since high school, but 2013 was the year I found The One. The Whitney English Day Designer is so well thought out that I have to refrain from kissing the lady behind it each and every time I see her. From the worksheets in the front for the solo entrepreneur, to the full page allotted for each day, to the schedule and to do columns – I’m smitten. I’ve never felt more organized in my life, which is saying a lot. (Please note the importance of the last item on my Sunday to do list below.)
