The Daily Eat: Lemony Potato Salad.

This Lemony Potato Salad is another great option for those anti-mayo eaters out there. I think I’d probably mess around with the recipe a bit – omitting the capers and maybe adding some celery among other things.

Do you like alternative potato salad recipes or prefer the tried and true mustard and mayonnaise versions?

    Potatoes. Hard boiled egg. Onion. Mayo. Salt & pepper. Secret ingredient? Balsamic vinegar. Simple, yet delish. Throw some bacon in there if you're so inclined : )

    potatoes are good in every variation…at least in my book. Caroline’s secret is one I’ve tried and loved too.

    Alternative!
    With exceptions; My husband made potato salad this weekend. He put garlic in it. WAY too much garlic, raw… potato salad doesn’t even need garlic. I’m not touching it, but how soon is too soon to pitch-it without hurting his feelings?…
    I make mine with greek yogurt instead of mayo, celery is a must… after all, the potatoes are merely a vehicle for me to eat more celery.

    I love any incarnation of potato salad, but the one you posted is gonna come in extra-handy for me because I’m on this kooky “no mayo” diet (hate those!) and I have lots of potatos sitting in my kitchen.
